Description

A quick and comforting meal featuring Italian-spiced chicken sausage and vibrant vegetables, all cooked in an air fryer in just 10 minutes.


Ingredients

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 1 package chicken sausage (12 oz), preferably Italian flavor

Instructions

  1. Chop the veggies and add them to a large bowl. Drizzle with avocado oil and toss to coat.
  2. In a smaller bowl, mix the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Add the spice blend to the veggies and toss to coat.
  3. Slice the chicken sausage into 3/4 inch rounds and add to the bowl with the veggies, tossing to combine.
  4. Preheat the air fryer to 390°F. Spray the basket with cooking spray and add the veggie and sausage mixture in an even layer.
  5. Cook for 10 minutes, flipping halfway through until the vegetables are golden and the sausage is browned.
  6. Serve immediately, optionally over cooked cauliflower or brown rice.

Notes

For a different twist, try using smoked paprika, add halved cherry tomatoes for a Mediterranean vibe, or swap chicken sausage with vegetarian options. Serve with a squeeze of lemon for added brightness.
