Ingredients

  • 1 packet taco seasoning
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 cup diced tomatoes
  • 1/2 cup sour cream
  • 1/2 cup chopped lettuce
  • Salsa (optional)
  • Salt and black pepper to taste
  • Squeeze of lime (optional)
  • 1 tbsp olive oil (if needed)

Instructions

  1. Preheat your oven to 400°F (200°C) and place a rack in the middle.
  2. In a skillet over medium heat, cook the ground chicken until browned, breaking it into small pieces.
  3. Add the taco seasoning and follow the packet instructions, adding a splash of water if necessary.
