Ingredients

- 1 lb ground chicken
- 1 packet taco seasoning
- 8 corn tortillas
- 1 cup shredded cheese
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 1/2 cup chopped lettuce
- Salsa (optional)
- Salt and black pepper to taste
- Squeeze of lime (optional)
- 1 tbsp olive oil (if needed)
Instructions
- Preheat your oven to 400°F (200°C) and place a rack in the middle.
- In a skillet over medium heat, cook the ground chicken until browned, breaking it into small pieces.
- Add the taco seasoning and follow the packet instructions, adding a splash of water if necessary.
- Arrange corn tortillas in a baking dish.
- Fill each tortilla with the seasoned chicken and top with shredded cheese and diced tomatoes.
- Bake for 10-15 minutes until the cheese is melted and bubbly.
- Serve with sour cream, lettuce, and salsa as desired.
