- 2 cups sliced yellow squash or zucchini
- 1 cup shredded cheese
- 1 cup breadcrumbs
- 2 large eggs
- 1 onion, finely chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Wash and slice the squash, then place it in a colander, sprinkle with salt, and let it sit for 10 minutes to draw out moisture.
- In a mixing bowl, beat the eggs. Add the shredded cheese and chopped onion, mixing until well combined.
- Add the prepared squash to the bowl and mix gently to combine.
- Pour the mixture into a greased baking dish and sprinkle breadcrumbs on top.
- Bake for 30-35 minutes, or until golden brown and set. Let cool for a few minutes before serving.
Notes
For a vegan version, replace the eggs with a flaxseed mixture and use vegan cheese. For gluten-free, use gluten-free breadcrumbs.
