Description

A quick and comforting meal featuring juicy chicken breasts and tender-roasted vegetables, all made effortlessly in the air fryer.

Ingredients

Scale
  • 2 boneless chicken breasts
  • 1 cup mixed vegetables (bell peppers, zucchini, broccoli)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, combine olive oil, garlic powder, paprika, salt, and pepper; whisk until evenly mixed.
  3. Coat the chicken breasts in the oil mixture.
  4. Toss the mixed vegetables with any remaining oil mixture.
  5. Place the chicken and vegetables in the air fryer basket, ensuring they are not crowded.
  6. Cook for 15-20 minutes, flipping halfway through, until the chicken reaches 165°F and the vegetables are fork-tender.
  7. Let the chicken rest for a couple of minutes before slicing and serve hot.

Notes

Allow the chicken to sit at room temperature for 10-15 minutes before cooking for even results. Use an instant-read thermometer for best accuracy.
