Description

Delicious potato farls that are crispy on the outside and fluffy on the inside, perfect for any meal or snack.


Ingredients

  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons butter, softened
  • As needed tablespoons additional flour for dusting

Instructions

  1. Place mashed potatoes in a large mixing bowl and stir to soften if cold.
  2. Add flour, baking powder, and salt, and mix until combined.
  3. Incorporate softened butter and mix until fully blended.
  4. Flour your work surface and turn out the dough onto it.
  5. Knead gently until smooth and pat into a ½ inch thick disc.
  6. Cut the disc into quarters or wedges.
  7. Heat a skillet over medium heat, adding a little butter or oil.
  8. Cook each farl for 4-5 minutes on each side until golden brown.
  9. Keep warm while finishing remaining farls.
