Ingredients

- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons butter, softened
- As needed tablespoons additional flour for dusting
Instructions
- Place mashed potatoes in a large mixing bowl and stir to soften if cold.
- Add flour, baking powder, and salt, and mix until combined.
- Incorporate softened butter and mix until fully blended.
- Flour your work surface and turn out the dough onto it.
- Knead gently until smooth and pat into a ½ inch thick disc.
- Cut the disc into quarters or wedges.
- Heat a skillet over medium heat, adding a little butter or oil.
- Cook each farl for 4-5 minutes on each side until golden brown.
- Keep warm while finishing remaining farls.
Notes
These farls can be customized with add-ins like chives or cheese, and are great with dips and toppings.
