Ingredients

  • 4 fillets Cod (thick, white cod fillets)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 medium Onion (sauté until translucent)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease your baking dish with oil.
  2. Season the cod fillets with salt and pepper and let them rest.
  3. In a skillet, heat olive oil and sauté diced onion for 3-4 minutes until translucent.
  4. Add minced garlic and grated ginger, cooking for an additional minute.
  5. Pour in the coconut milk, whisk to combine, and add lemon juice and zest. Let simmer for about 5 minutes.
  6. Pour half of the sauce into the baking dish, place the cod fillets, and drizzle remaining sauce over it.
  7. Bake for 15-20 minutes until the fish flakes easily.
  8. Let it rest for a couple of minutes before serving.

Notes

For added richness, you can stir in a knob of butter to the sauce. Fresh herbs like cilantro or parsley are optional for garnish.
