- 4 fillets Cod (thick, white cod fillets)
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 tablespoons Olive Oil (for sautéing)
- 1 medium Onion (sauté until translucent)
- 2 cloves Garlic (minced)
- 1 tablespoon Ginger (grated)
- 1 can Coconut Milk (full-fat preferred)
- 3 tablespoons Lemon Juice (freshly squeezed)
- 1 teaspoon Lemon Zest
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease your baking dish with oil.
- Season the cod fillets with salt and pepper and let them rest while preparing the sauce.
- In a skillet over medium heat, heat the olive oil and sauté the diced onion for 3-4 minutes until translucent.
- Add minced garlic and grated ginger, cooking for an additional minute.
- Pour in the coconut milk, whisk to combine, and add lemon juice and zest. Let it simmer for about 5 minutes.
- Pour half of the sauce into the baking dish, place the cod fillets, and drizzle remaining sauce over it.
- Bake for 15-20 minutes or until the fish flakes easily. Let it rest for a couple of minutes before serving.
Notes
For richer sauce, add a knob of butter; for a lighter version, use light coconut milk. Fresh herbs can be added for garnish.
