Description

Delicious and nutritious Banana Oatmeal Bars made with ripe bananas and hearty oats, perfect for a quick breakfast or snack.


Ingredients

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 cup honey or maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts or chocolate chips (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking dish with parchment paper.
  3. Mash the ripe bananas until smooth in a mixing bowl.
  4. Add rolled oats and cinnamon, and stir until combined.
  5. If desired, add honey or maple syrup and vanilla extract, then mix well.
  6. Fold in chopped nuts or chocolate chips if using.
  7. Spread the mixture evenly into the lined baking dish.
  8. Bake for 20-25 minutes until golden brown.
  9. Cool in the pan for 10 minutes, then lift out and cool completely on a wire rack before cutting into squares.

Notes

Use overripe bananas for optimal sweetness; store in an airtight container for up to 3 days.
