Ingredients

  • 1/2 cup barbecue sauce
  • 2 medium sweet potatoes, diced
  • 1 avocado, sliced
  • 1 cup corn (fresh or canned)
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings: cilantro, green onions, lime wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes.
  3. Toss the sweet potatoes with olive oil, salt, and pepper; spread in a single layer on a rimmed baking sheet.
  4. Roast for 25 to 30 minutes, turning halfway through.
  5. Pat chicken breasts dry and season with salt and pepper.
  6. Heat a skillet over medium-high heat with olive oil; cook chicken for 6 to 7 minutes per side.
  7. In the last few minutes, brush chicken with barbecue sauce.
  8. Let the chicken rest for 5 minutes, then slice.
  9. In bowls, layer sweet potatoes, chicken, corn, and avocado; add optional toppings and serve.
