- 1/2 cup barbecue sauce
- 2 medium sweet potatoes, diced
- 1 avocado, sliced
- 1 cup corn (fresh or canned)
- Salt and pepper to taste
- Olive oil

Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice the sweet potatoes into 1-inch cubes.
- Toss the sweet potatoes with olive oil, salt, and pepper; spread in a single layer on a rimmed baking sheet.
- Roast for 25 to 30 minutes, turning halfway through.
- Pat chicken breasts dry and season with salt and pepper.
- Heat a skillet over medium-high heat with olive oil; cook chicken for 6 to 7 minutes per side.
- In the last few minutes, brush chicken with barbecue sauce.
- Let the chicken rest for 5 minutes, then slice.
- In bowls, layer sweet potatoes, chicken, corn, and avocado; add optional toppings and serve.
