Description

A comforting and satisfying casserole that layers seasoned beef, red enchilada sauce, and melty cheese for a family-friendly dinner.


Ingredients

  • 1 pound ground beef
  • 1 can red enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • 1 tablespoon olive oil for sautéing
  • 12 cloves garlic, minced or ½ teaspoon garlic powder (optional)
  • Optional pinch of chili powder or smoked paprika
  • Small splash of broth or water if sauce is too thick

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until translucent.
  3. Add ground beef, breaking it up and cook until browned. Drain excess fat.
  4. Stir in enchilada sauce, black beans, corn, and cumin. Season with salt and pepper. Simmer for 3 to 5 minutes.
  5. In a casserole dish, spread a layer of the beef mixture, top with 4 corn tortillas.
  6. Add more beef mixture and half of the shredded cheese. Repeat layering with remaining tortillas, beef mixture, and top with remaining cheese.
  7. Cover loosely with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  8. Let cool for a few minutes before slicing. Garnish with fresh cilantro, if desired.

Notes

Use lean ground meat and lower-fat cheese to make it healthier. Store leftovers in an airtight container for up to 3-4 days.
