Description

A comforting and delicious Beef Enchilada Casserole that layers seasoned beef, black beans, corn, and cheese into a delightful family-friendly dish.


Ingredients

  • 1 pound ground beef
  • 1 can red enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • 1 tablespoon olive oil (for sautéing)
  • 12 cloves garlic, minced or ½ teaspoon garlic powder (optional)
  • Optional pinch of chili powder or smoked paprika
  • Small splash of broth or water if sauce is too thick

Instructions

  1. Preheat the oven to 350°F (175°C). Place a rack in the center.
  2. Heat olive oil in a large skillet over medium heat and cook the chopped onion until translucent, about 4 to 5 minutes.
  3. Add ground beef to the skillet, breaking it up and cooking until browned, then drain any excess fat.
  4. Stir in red enchilada sauce, black beans, corn, and cumin. Season with salt and pepper, and let simmer for 3 to 5 minutes.
  5. Spread a thin layer of the enchilada mixture across the bottom of a 9×13-inch casserole dish. Layer 4 tortillas on top.
  6. Spoon more beef mixture over the tortillas and sprinkle half of the cheese on top. Repeat layers of tortillas, beef mixture, and remaining cheese.
  7. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  8. Let cool for a few minutes, then slice and serve with fresh cilantro if desired.

Notes

For a healthier dish, use lean ground turkey or extra-lean beef. You can also make it vegetarian by increasing the beans and adding more vegetables.
