A comforting and delicious Beef Enchilada Casserole that layers seasoned beef, black beans, corn, and cheese into a delightful family-friendly dish.

- 1 pound ground beef
- 1 can red enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 onion, chopped
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- 1 tablespoon olive oil (for sautéing)
- 1–2 cloves garlic, minced or ½ teaspoon garlic powder (optional)
- Optional pinch of chili powder or smoked paprika
- Small splash of broth or water if sauce is too thick
Instructions
- Preheat the oven to 350°F (175°C). Place a rack in the center.
- Heat olive oil in a large skillet over medium heat and cook the chopped onion until translucent, about 4 to 5 minutes.
- Add ground beef to the skillet, breaking it up and cooking until browned, then drain any excess fat.
- Stir in red enchilada sauce, black beans, corn, and cumin. Season with salt and pepper, and let simmer for 3 to 5 minutes.
- Spread a thin layer of the enchilada mixture across the bottom of a 9×13-inch casserole dish. Layer 4 tortillas on top.
- Spoon more beef mixture over the tortillas and sprinkle half of the cheese on top. Repeat layers of tortillas, beef mixture, and remaining cheese.
- Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Let cool for a few minutes, then slice and serve with fresh cilantro if desired.
Notes
For a healthier dish, use lean ground turkey or extra-lean beef. You can also make it vegetarian by increasing the beans and adding more vegetables.
