  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the pot and oil: Place a large pot or Dutch oven over medium heat and add the olive oil. When hot, add the beef cubes in a single layer and brown on all sides.
  2. Remove the beef: Use a slotted spoon to lift the browned beef into a bowl and set aside.
  3. Sauté the aromatics: Add the chopped onion and garlic to the pot. Cook until the onion is translucent, about 4-5 minutes.
  4. Build the flavor: Stir in the tomato paste, thyme, and rosemary. Cook for another minute until fragrant.
  5. Add everything back: Return the beef to the pot along with the carrots, potatoes, and beef broth. Stir to combine.
  6. Simmer gently: Bring to a low boil, then reduce to low heat, cover, and simmer for 1.5 to 2 hours until the beef is fork-tender.
  7. Season and finish: Taste the broth, adding salt and pepper to taste. If the stew is too thin, simmer uncovered for 10-15 minutes.
