Instructions
- Peel the sweet potatoes and slice them into 1/2-inch rounds.
- In a large pot, combine the sliced sweet potatoes, brown sugar, butter, cinnamon, nutmeg, vanilla extract, and salt. Mix gently to coat the sweet potatoes.
- Place the pot over medium heat and cover it. Cook for 25 to 30 minutes, stirring occasionally, until the sweet potatoes are tender.
- Serve warm, garnished with additional cinnamon or chopped pecans if desired.
