Instructions
- Add diced potatoes, chopped onion, diced carrots, and diced celery into a large pot. Pour in chicken or vegetable broth.
- Place the pot over medium-high heat and let it come to a boil. Reduce heat to a simmer, cover, and cook for 15-20 minutes until vegetables are tender.
- Use a potato masher or immersion blender to mash a portion of potatoes in the pot to achieve a creamy texture.
- Stir in heavy cream and garlic powder, season with salt and pepper, and cook for an additional 5 minutes.
- Ladle the soup into bowls, garnishing with fresh chives or parsley before serving hot.
