- 1.5 lbs beef (chuck or stewing beef), cut into chunks
- 2 cups beef broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 tablespoons flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 sheets of pie crust (store-bought or homemade)
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large pot, heat a splash of oil over medium heat. Add the beef chunks, seasoning lightly with salt and pepper. Brown them on all sides for about 5-7 minutes, then remove from the pot and set aside.
- Add the chopped onion, sliced carrots, and minced garlic to the pot, cooking for about 5 minutes until softened.
- Sprinkle the flour over the vegetables, stirring for another minute.
- Gradually add the beef broth, stirring continuously.
- Add Worcestershire sauce, thyme, and season with salt and pepper. Let the mixture simmer.
- Return browned beef to the pot, cover, and simmer for about 30 minutes.
- Roll out one pie crust into a pie dish and pour in the beef mixture.
- Roll out the second pie crust to cover the filling, sealing the edges and making slits for steam.
- Brush the top with the beaten egg, then bake for 30-35 minutes until golden brown.
- Allow the pie to cool slightly before slicing and serving.
Notes
For variations, consider adding mushrooms, root vegetables, or using chicken instead of beef.
