Ingredients

  • 1 cup vegetable broth
  • 1 cup milk or cream
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons flour
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Warm the olive oil in a large, heavy pot set over medium heat. Add the chopped onion and minced garlic and let them soften for about 3-4 minutes.
  2. Sprinkle the flour over the mixture and stir to coat the vegetables. Cook for about 1 minute.
  3. Slowly pour in the vegetable broth while whisking to avoid lumps. Allow it to thicken slightly.
  4. Add the broccoli florets and simmer until tender, about 10-15 minutes.
  5. Pour in the milk or cream and bring to a gentle simmer.
  6. Lower the heat and stir in the cheddar cheese gradually, allowing it to melt smoothly.
  7. Taste and season with salt and pepper. Serve hot, optionally garnished with extra cheese or broccoli florets.

Notes

For a lower-calorie version, use milk instead of cream. Add bacon or pancetta for a smoky flavor.
