- 1 pound Smoked sausage
- 12–16 ounces Bow tie pasta
- 1 can (14.5 ounces) Fire roasted tomatoes
- 1 cup Whipping cream
- 1 medium Onion, chopped
- 2–3 teaspoons Minced garlic
- 1–2 tablespoons Cajun seasoning
- 2 cups Chicken broth
- 1–1.5 cups Cheddar cheese, freshly shredded
- Salt, to taste
- Black pepper, to taste
- Neutral oil or butter, for sautéing
Instructions
- Heat your pot over medium heat and add a splash of oil. Add the onion and minced garlic, cooking until the onion is translucent and garlic is fragrant, about 3-5 minutes.
- Slice the smoked sausage into coin-shaped pieces and add to the pot. Let the sausage brown, stirring occasionally.
- Add fire roasted tomatoes, Cajun seasoning, and chicken broth. Stir and bring to a gentle simmer.
- Add bow tie pasta, ensuring it is mostly covered by the sauce. Cook according to package directions, stirring occasionally.
- Once the pasta is al dente, lower the heat and stir in the whipping cream. Add shredded cheddar cheese in handfuls, stirring until melted and sauce is silky.
- Taste and adjust seasoning if necessary. Serve warm with extra sauce on top.
Notes
For added richness, stir in cream cheese with the whipping cream. Feel free to mix in vegetables or try different pasta shapes.
