- 1 head of cauliflower, chopped
- 1 bulb of garlic
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup sharp cheddar cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: cream or milk for extra creaminess
Instructions
- Preheat your oven to 400°F (200°C). Cut the top off the bulb of garlic, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
- In a large pot, heat olive oil over medium heat, add chopped onion, and sauté until translucent, about 5 minutes.
- Add chopped cauliflower and vegetable broth to the pot, bring to a boil, then reduce heat and simmer for 15-20 minutes until the cauliflower is tender.
- Once the garlic is roasted and cool, squeeze the soft cloves into the soup and blend until smooth.
- Stir in shredded cheddar cheese until melted, season with salt and pepper, and optionally add cream or milk for extra richness.
- Serve hot, garnished with more cheese or fresh herbs.
Notes
For added flavor, try incorporating herbs like thyme or rosemary. This soup stores well and can be reheated easily.
