- 12 oz cheese tortellini
- 1 lb beef steak, thinly sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 cup provolone cheese, shredded
- 1 cup beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook cheese tortellini according to package instructions (3-5 minutes). Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add sliced beef and sear for 3-4 minutes until browned.
- Stir in bell pepper, onion, and garlic. Sauté for 4-5 minutes until vegetables soften.
- Pour in beef broth and simmer for 2-3 minutes to meld the flavors.
- Add cooked tortellini and shredded provolone. Stir until cheese melts, about 2-3 minutes.
- Season with salt and pepper to taste and serve warm.
