Making this Cheesy Beef Enchilada Tortellini is a breeze, and it only takes about 30 minutes from start to finish. Here’s how to do it:

Step 1: Cook the Tortellini
In a large pot of salted boiling water, cook the cheese tortellini according to the package instructions. Be careful not to overcook it! Once done, drain the tortellini and set aside.

Step 2: Brown the Ground Beef
While the tortellini cooks, heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until it’s browned and cooked through. This should take about 5-7 minutes.

Step 3: Sauté the Onions and Garlic
