Ingredients

- 1 pound ground beef
- 1 cup uncooked rice
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 2 cups beef broth
- 1 onion, chopped
- 2 cups mixed vegetables (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef and chopped onion over medium heat. Drain excess fat.
- Stir in the uncooked rice, cream of mushroom soup, and beef broth. Add mixed vegetables if using, and season with salt and pepper.
- Transfer the mixture to a greased 9×13 baking dish, covering evenly. Cover with aluminum foil.
- Bake for 30 minutes, then remove the foil and sprinkle cheddar cheese on top.
- Return to the oven for another 10-15 minutes until the cheese is melted and bubbling.
- Let cool for a few minutes before serving.
Notes
Can be customized with different proteins, vegetables, or cheeses. Leftovers make great lunches.
