  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 0.5 cup long grain white rice
  • 0.75 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Crumble the ground beef into a heated skillet over medium-high heat, breaking it apart and cooking until evenly browned.
  2. Remove excess grease from the skillet, leaving a little for flavor.
  3. Lower the heat, add the cream of mushroom soup and diced tomatoes, stirring to combine.
  4. Add the uncooked rice, stirring until coated with the mixture and then cover with a lid.
  5. Simmer over low heat, stirring occasionally, until the rice is tender (about 15 minutes).
  6. Preheat the oven’s broiler while the rice finishes cooking.
  7. Transfer contents to a casserole dish if the skillet is not oven-safe, smooth the top, and sprinkle mozzarella cheese over the mixture.
  8. Broil until the cheese is melted and bubbly, watching closely to prevent burning.
  9. Let the casserole rest for a couple of minutes, season with salt and pepper, and serve.
