- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 medium onion, diced
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 tsp dried parsley
- Salt and pepper to taste
Instructions
- In a large pot, place the chicken breasts and pour in the chicken broth. Add the sliced carrots, celery, and diced onion, bringing everything to a rolling boil.
- Once boiling, reduce to a gentle simmer and cook for about 15 to 20 minutes until the chicken is no longer pink.
- Remove the chicken, shred it into bite-sized pieces, and return it to the pot.
- In a mixing bowl, whisk together flour, baking powder, and salt. Gradually stir in milk, melted butter, and dried parsley until you form a soft dough.
- Drop spoonfuls of the dumpling dough into the simmering soup. Cover and let steam for another 15 to 20 minutes.
- Before serving, taste the soup and adjust seasoning with salt and pepper.
