Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, diced
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. In a large pot, place the chicken breasts and pour in the chicken broth. Add the sliced carrots, celery, and diced onion, bringing everything to a rolling boil.
  2. Once boiling, reduce to a gentle simmer and cook for about 15 to 20 minutes until the chicken is no longer pink.
  3. Remove the chicken, shred it into bite-sized pieces, and return it to the pot.
  4. In a mixing bowl, whisk together flour, baking powder, and salt. Gradually stir in milk, melted butter, and dried parsley until you form a soft dough.
  5. Drop spoonfuls of the dumpling dough into the simmering soup. Cover and let steam for another 15 to 20 minutes.
  6. Before serving, taste the soup and adjust seasoning with salt and pepper.
