A quick and delicious stir-fry featuring tender chicken and crisp green beans in a savory-sweet sauce.


Ingredients

  • 1 pound boneless skinless chicken breasts, sliced into thin strips
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Pat the chicken strips dry and season with salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat until it shimmers.
  2. Add the chicken to the pan in a single layer and sear for 5 to 7 minutes until golden-brown and cooked through. Remove and set aside.
  3. Add the remaining oil to the pan and add the green beans. Stir-fry for 3 to 4 minutes until tender-crisp.
  4. Push the beans to the side, add garlic and ginger, and sauté for 30 to 60 seconds until fragrant.
  5. Return the chicken to the skillet and whisk together soy sauce, honey, sesame oil, and red pepper flakes. Pour over chicken and beans and stir to coat.
  6. Cook for another 2 to 3 minutes until heated through and the sauce clings to the chicken and beans.
  7. Serve over rice or noodles, garnished with green onions or sesame seeds if desired.
