A comforting Chicken Parmesan dish featuring breaded chicken topped with marinara sauce and melted mozzarella.

- 2 chicken breasts (large, about 1 1/2 lbs)
- 1/2 cup all-purpose flour (or GF flour)
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large eggs (beaten until frothy)
- 1/2 cup Italian bread crumbs
- 1/2 cup parmesan cheese (shredded or grated)
- 2 Tbsp light olive oil (for sautéing)
- 3 cups marinara sauce (divided)
- 4 oz mozzarella cheese (1 cup shredded)
- 1 Tbsp fresh basil (or parsley, chopped for optional garnish)
Instructions
- Prepare the chicken: Slice the chicken breasts in half lengthwise for four cutlets. Pound to about 1/3-inch thick and season with salt and pepper.
- Set up the dredging station: Mix flour, salt, and pepper in one bowl, whisk eggs in a second bowl, and combine breadcrumbs and parmesan in a third.
- Bread the chicken: Coat both sides with flour mixture, dip in eggs, and then coat with breadcrumb mixture. Let sit for 5 minutes.
- Pan-fry the chicken: Heat olive oil in a pan and sauté chicken in batches for 3-4 minutes per side until golden brown.
- Assemble and bake: Layer half of the marinara sauce in a casserole dish, add chicken, top with remaining sauce and mozzarella, then bake at 425°F for 15 minutes until cooked through and cheese is melted.
Notes
Let the chicken rest for a few minutes after baking to allow juices to redistribute.
