- 8 oz whole grain pasta
- 12 oz chicken sausage
- 1 cup bell peppers, chopped
- 1 cup zucchini, chopped
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt, to taste
- Pepper, to taste
- Parmesan cheese (optional)
Instructions
- Boil a large pot of water and cook the whole grain pasta according to the package instructions until al dente. Drain and set aside.
- In a non-stick skillet over medium heat, warm the olive oil for about a minute.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Slice the chicken sausage into bite-sized pieces and add to the skillet. Cook until browned, about 3 to 5 minutes.
- Add the chopped bell peppers and zucchini, sautéing for 4 to 5 minutes until tender but vibrant.
- Combine the cooked pasta with the sausage and vegetables in the skillet, tossing to coat.
- Season with salt and pepper, then serve warm or divide into meal prep containers for later.
