Description

Juicy chicken skewers marinated in lemon, garlic, and oregano, perfect for wrapping in pita with tzatziki and salad.


Ingredients

  • 1 pound chicken breast, cut into cubes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Wooden or metal skewers

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper until emulsified.
  2. Add chicken cubes and toss until every piece is coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat. If using a grill pan, heat until hot.
  4. Thread marinated chicken onto skewers, leaving space between pieces.
  5. Grill for 10 to 15 minutes, turning occasionally until cooked through (internal temperature of 165°F).
  6. Remove skewers and let them rest for 3 to 5 minutes before serving.
  7. Serve with warm pita and tzatziki, squeezing extra lemon over if desired.

Notes

For an easy dinner, serve skewers with a fresh salad and warm pita bread. Tzatziki is a great complement.
