  • 1 tablespoon Shaoxing cooking wine
  • ½ teaspoon Kosher salt
  • ¼ teaspoon baking soda
  • 2 tablespoons cornstarch
  • 1 tablespoon neutral oil
  • ⅔ cup soy sauce (light sodium)
  • ⅔ cup water
  • 4 tablespoons granulated sugar
  • 2½ tablespoons cornstarch
  • 1½ teaspoons toasted sesame oil
  • 1 pound broccoli (cut into florets)
  • 1½ tablespoons garlic (minced)
  • 1½ tablespoons ginger (minced)

Instructions

  1. Marinate the chicken with water, Shaoxing cooking wine, Kosher salt, baking soda, and cornstarch. Let sit for 15-20 minutes.
  2. In a separate bowl, whisk together soy sauce, additional water, sugar, and cornstarch to prepare the sauce.
  3. Heat the oil in a large frying pan or wok over medium-high heat. Add the marinated chicken and cook for 5-7 minutes until golden brown.
  4. Stir in minced garlic and ginger, cooking for about one minute.
  5. Add broccoli florets and cook for an additional 3-4 minutes until bright green and tender-crisp.
  6. Pour the prepared sauce over the chicken and broccoli, stirring until it thickens and coats the ingredients.
  7. Serve warm over rice.

Notes

Try adding red pepper flakes for heat or swap chicken for tofu for a vegetarian option.
