- ¼ teaspoon baking soda
- 2 tablespoons cornstarch
- 1 tablespoon neutral oil
- ⅔ cup soy sauce (light sodium)
- ⅔ cup water
- 4 tablespoons granulated sugar
- 2½ tablespoons cornstarch
- 1½ teaspoons toasted sesame oil
- 1 pound broccoli (cut into florets)
- 1½ tablespoons garlic (minced)
- 1½ tablespoons ginger (minced)
Instructions
- Marinate the chicken with water, Shaoxing cooking wine, Kosher salt, baking soda, and cornstarch. Let sit for 15-20 minutes.
- In a separate bowl, whisk together soy sauce, additional water, sugar, and cornstarch to prepare the sauce.
- Heat the oil in a large frying pan or wok over medium-high heat. Add the marinated chicken and cook for 5-7 minutes until golden brown.
- Stir in minced garlic and ginger, cooking for about one minute.
- Add broccoli florets and cook for an additional 3-4 minutes until bright green and tender-crisp.
- Pour the prepared sauce over the chicken and broccoli, stirring until it thickens and coats the ingredients.
- Serve warm over rice.
Notes
Try adding red pepper flakes for heat or swap chicken for tofu for a vegetarian option.
