Instructions
- Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a bowl, whisk the eggs and granulated sugar together until light and fluffy.
- Sift the flour, cocoa powder, baking powder, and salt together, then fold into the egg mixture.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes until the cake springs back when touched.
- Invert the cake onto a clean dish towel dusted with powdered sugar and roll it with the towel from the short end.
- Let it cool completely in that rolled form.
- For the filling, whip heavy cream with powdered sugar and vanilla until soft peaks form.
- Unroll the cooled cake, spread the whipped cream filling, and re-roll carefully.
- For the ganache, melt chocolate and butter together, cool slightly, then spread over the rolled cake.
- Dust with powdered sugar and garnish with fresh cranberries before serving.
Notes
Be gentle while folding the batter to retain airiness. Chill the filling for easier spreading if necessary.
