Description

Ingredients

  • 3/4 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces bittersweet chocolate, chopped
  • 1 cup unsalted butter
  • Powdered sugar for dusting
  • Fresh cranberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk the eggs and granulated sugar together until light and fluffy.
  3. Sift the flour, cocoa powder, baking powder, and salt together, then fold into the egg mixture.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for 12-15 minutes until the cake springs back when touched.
  6. Invert the cake onto a clean dish towel dusted with powdered sugar and roll it with the towel from the short end.
  7. Let it cool completely in that rolled form.
  8. For the filling, whip heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Unroll the cooled cake, spread the whipped cream filling, and re-roll carefully.
  10. For the ganache, melt chocolate and butter together, cool slightly, then spread over the rolled cake.
  11. Dust with powdered sugar and garnish with fresh cranberries before serving.

Notes

Be gentle while folding the batter to retain airiness. Chill the filling for easier spreading if necessary.
