Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Olive oil for sautéing
  • Small onion (optional)
  • Chicken or vegetable broth (optional)
  • Fresh herbs like parsley or basil (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, cook the ground beef or turkey until browned.
  4. Stir in cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  5. Stuff the bell peppers with the meat and rice mixture.
  6. Place stuffed peppers upright in a baking dish and add a bit of water to the bottom of the dish.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil, top with cheese (if using), and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly.

Notes

For extra flavor, consider adding a pinch of red pepper flakes for spice, or swap the meat for cooked lentils for a vegetarian option.
