A cozy and simple beef stew made in a crockpot, perfect for busy days and family dinners.
Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large skillet over medium-high heat. When hot, add the beef chunks in batches and brown them on all sides.
- Transfer the browned beef to the crockpot, scraping the skillet to capture the browned bits.
- Add chopped onion and minced garlic to the skillet, stirring until the onion is translucent.
- Add carrots and potatoes to the crockpot around the beef.
- Stir in tomato paste and Worcestershire sauce, then sprinkle thyme and rosemary on top.
- Pour the beef broth over the mixture and season with salt and pepper. Stir gently to combine.
- Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
- Serve hot, ladling the stew into bowls and garnishing with a sprinkle of pepper.
Notes
For thicker stew, remove the lid for the last 30 minutes of cooking on high or thicken with a slurry of cornstarch and water.
