- 4 large russet potatoes, scrubbed and diced
- 4 cups chicken broth or vegetable broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup sour cream
- 4 slices bacon, cooked and crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes until soft and translucent.
- Stir in the minced garlic and cook for another minute.
- Add the diced potatoes, broth, thyme, smoked paprika, salt, and pepper. Stir well and bring to a gentle boil.
- Reduce heat to a simmer, cover, and cook for 15-20 minutes until potatoes are fork-tender.
- Use an immersion blender to blend the soup to your desired consistency.
- Stir in the heavy cream, shredded cheddar, and sour cream. Cook over low heat for 5 minutes until cheese melts completely.
- Taste and adjust seasoning. Serve topped with crumbled bacon, additional cheese, and green onions.
