- 1 cup unsalted butter
- 1/2 cup powdered sugar
- 1 cup all-purpose flour
- 1/2 cup oat flour
- 1/2 cup fresh cranberries
- 1/2 cup granulated sugar
- 1 tablespoon orange zest
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup vanilla glaze (for drizzling)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a square baking dish by greasing and lining it with parchment paper.
- Cream the unsalted butter and powdered sugar together until light and fluffy.
- Gradually add in the all-purpose flour and oat flour until a crumbly dough forms.
- Press half of the dough into the bottom of the prepared baking dish for the crust.
- In another bowl, combine fresh cranberries, granulated sugar, orange zest, lemon juice, and vanilla extract; stir to coat.
- Spread the cranberry mixture over the crust evenly.
- Crumble the remaining dough over the cranberry filling.
- Bake for 30 to 35 minutes until the top is golden brown.
- Allow to cool, drizzle with vanilla glaze, then cut into squares for serving.
Notes
Use fresh cranberries for best results. Allow bars to cool completely for cleaner slices.
