- 2 cups fresh cranberries
- 1 cup sugar
- 1/2 cup water
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1 tablespoon gelatin
- 2 tablespoons lemon juice
Instructions
- In a saucepan over medium heat, combine fresh cranberries, sugar, and water. Cook for about 10 minutes until cranberries begin to burst. Let cool.
- Soften the gelatin by mixing it with a little water according to package instructions.
- Whip heavy cream in a mixing bowl until soft peaks form.
- Fold the cooled cranberry mixture into the softened gelatin, then fold in whipped cream gently.
- Layer the vanilla mousse and cranberry mousse into clear dessert cups.
- Chill the cups in the refrigerator for at least 3 hours until set.
