Ingredients

  • 2 cups fresh cranberries
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream
  • 1 tablespoon gelatin
  • 2 tablespoons lemon juice

Instructions

  1. In a saucepan over medium heat, combine fresh cranberries, sugar, and water. Cook for about 10 minutes until cranberries begin to burst. Let cool.
  2. Soften the gelatin by mixing it with a little water according to package instructions.
  3. Whip heavy cream in a mixing bowl until soft peaks form.
  4. Fold the cooled cranberry mixture into the softened gelatin, then fold in whipped cream gently.
  5. Layer the vanilla mousse and cranberry mousse into clear dessert cups.
  6. Chill the cups in the refrigerator for at least 3 hours until set.
