- 1 tablespoon Cajun seasoning

- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, bell pepper, and carrots; sauté until softened, about 5-7 minutes.
- Add diced chicken and Cajun seasoning; cook until chicken is golden brown, about 5 minutes.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream and simmer for an additional 10 minutes until slightly thickened.
- Season with salt and pepper as needed; garnish with chopped parsley before serving.
Notes
For a lighter version, replace heavy cream with coconut milk. Feel free to add more vegetables or protein variations.
