  • 300 ml thickened/heavy cream
  • 1 tsp Dijon mustard
  • 1/2 cup Parmesan cheese
  • Salt and pepper, to taste
  • Mashed potatoes or steamed rice or pasta (for serving)
  • Steamed greens (for a fresh touch)
  • 1 tbsp parsley, finely chopped (for garnish)
  • Lemon wedges (for a zesty finish)

Instructions

  1. Season the chicken schnitzels with salt flakes, pepper, sweet paprika, onion powder, and dried thyme.
  2. Dredge each chicken breast in flour, shaking off any excess.
  3. Heat olive oil and unsalted butter in a skillet over medium heat.
  4. Cook the schnitzels for 4-5 minutes on each side until golden-brown and cooked through.
  5. Remove schnitzels from skillet and keep warm.
  6. Melt additional butter in the same skillet and add minced garlic, sautéing until fragrant.
  7. Stir in chicken stock, scraping up browned bits.
  8. Add thickened cream and Dijon mustard, stirring gently as it simmers and thickens.
