Description
A comforting and flavorful bowl of udon noodles coated in a creamy gochujang sauce, perfect for busy weeknights.
Ingredients

- 2 packs frozen udon noodles
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 shallots, chopped
- 1 1/2 tbsp gochujang
- 1/2 cup heavy cream
- 1/2 cup reserved noodle water
- 2 tsp soy sauce
- 1 tsp gochugaru
- 1 green onion, chopped (for garnish)
- Grated parmesan cheese (for serving)
- Egg yolk (optional)
- Salt and freshly ground black pepper to taste
- A splash of neutral oil (if your skillet is not nonstick)
- A small pinch of sugar (if your gochujang is tangy)
Instructions
- Bring a large pot of salted water to a rolling boil. Add the frozen udon noodles and cook according to package instructions. Reserve 1/2 cup of noodle water before draining and rinse noodles under warm water.
- In a skillet over medium heat, melt butter until foamy. Add garlic and shallots, sauté for 2-3 minutes until translucent.
- Stir in gochujang and cook for 30 seconds. Gradually add heavy cream and reserved noodle water, whisking to create a smooth sauce.
- Add soy sauce and gochugaru, simmer until sauce thickens.
- Toss the cooked udon in the sauce until evenly coated. Serve immediately topped with parmesan cheese and garnish with green onion. Optionally add an egg yolk.
Notes
Reserve 1/2 cup of noodle water for emulsification. Adjust seasoning to taste as gochujang can vary in flavor.
