A comforting one-skillet meal featuring elbow macaroni, ground beef, and a creamy sauce made with Rotel tomatoes and cheese.

- 8 oz Elbow Macaroni
- 1 lb Ground Beef
- 2 tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Salt
- 1 tsp Pepper
- 1 can Diced Tomatoes with Green Chilies (Rotel)
- 8 oz Cream Cheese
- 1 cup Beef Broth
- 1 cup Shredded Cheddar Cheese
Instructions
- Bring a large pot of salted water to a boil over high heat. Add the elbow macaroni and cook according to package instructions until al dente (8-10 minutes). Stir occasionally.
- In a skillet, heat olive oil over medium heat and brown the ground beef (5-7 minutes). Drain excess fat.
- Add garlic powder, onion powder, salt, and pepper to the beef; cook for 1-2 minutes.
- Add diced tomatoes with green chilies and let cook for 3-4 minutes.
- Lower heat and add cream cheese, stirring until melted.
- Pour in beef broth, mix well and let simmer for 2-3 minutes.
- Drain the pasta and add it to the skillet; toss until coated.
- Top with shredded cheddar cheese, stir until melted, and serve hot.
Notes
For a creamier sauce, reduce the beef broth to 3/4 cup and add a tablespoon of butter. Adjust seasoning to taste.
