Instructions
- Bring a large pot of salted water to a boil and add the gnocchi. Cook according to package instructions until they float, about 2-3 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Cook the salmon fillets for 3-4 minutes on each side until golden brown. Remove and flake into bite-sized pieces.
- Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
- Pour in heavy cream and bring to a gentle simmer, allowing it to thicken slightly.
- Add fresh spinach and cook until wilted, about 1 minute.
- Stir in grated Parmesan cheese until melted and combined.
- Fold in cooked gnocchi and flaked salmon. Toss gently with salt and pepper. Serve immediately with lemon wedges.
