  • 12 oz rigatoni pasta
  • 1 lb Italian sausage
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add rigatoni and cook according to package instructions until al dente. Drain and reserve 1/2 cup pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it apart and cooking until browned, about 5 to 7 minutes.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in the diced tomatoes with their juices and bring to a simmer, stirring to combine.
  5. Lower the heat and stir in heavy cream and grated Parmesan cheese. Cook for 3 to 5 minutes until sauce thickens.
  6. Add the cooked rigatoni to the skillet and toss gently to coat in the sauce. If needed, add reserved pasta water to adjust sauce texture.
  7. Season with salt and pepper to taste. Serve hot, garnished with fresh herbs.

Notes

For variations, you can swap Italian sausage with turkey sausage, add vegetables like spinach, or use a different cheese.
