Description

A comforting and creamy pasta dish featuring tender salmon and wilted spinach in a silky sauce.


Ingredients

  • 8 oz pasta (such as fettuccine or linguine)
  • 2 salmon fillets
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese (for serving)

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large pot, bring salted water to a rolling boil, add the pasta, and stir. Cook until tender but still al dente. Drain, reserving a half cup of pasta water.
  3. In a non-stick skillet over medium heat, warm the olive oil. Season salmon fillets with salt and pepper, cook for 4-5 minutes on each side until flaky. Remove from skillet and let rest, then flake into bite-sized pieces.
  4. In the same skillet, add minced garlic and sauté until fragrant, about a minute.
  5. Add spinach in handfuls to the skillet and stir until wilted.
  6. Pour in heavy cream, mix well, and simmer for 3-4 minutes until slightly thickened.
  7. Add the flaked salmon and cooked pasta, tossing until the pasta is well-coated.
  8. Serve warm, garnished with Parmesan cheese.

Notes

For a silker finish, add a pinch of butter at the end and adjust the texture with reserved pasta water if necessary. Use fresh ingredients for the best flavor.
