Instructions
- Warm the olive oil in a large pot over medium heat until it shimmers.
- Add the chopped onion and minced garlic, sauté until the onion is soft and translucent, about 5-8 minutes.
- Pour in the canned tomatoes and broth; bring to a gentle simmer and cook uncovered for about 20 minutes.
- Stir in the heavy cream, season with salt and pepper, and let it warm through.
- Use an immersion blender to puree the soup until smooth. Strain if desired for extra silkiness.
- Heat gently, adjust seasoning, and ladle into bowls for serving.
- Garnish with fresh basil or thyme if desired.
Notes
For a dairy-free version, substitute heavy cream with coconut milk. You can also add roasted red peppers for a smoky twist.
