A warm and comforting soup that transforms traditional cabbage rolls into a hearty meal, perfect for chilly days.

Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 small head of cabbage, chopped
  • 1 can (15 oz) diced tomatoes
  • 2 cups beef broth
  • 1 cup rice (uncooked)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef for about 5-7 minutes. Add chopped onion and minced garlic, sauté until the onion is translucent, then drain excess fat.
  2. In a large crockpot, combine the cooked beef mixture with chopped cabbage, diced tomatoes, beef broth, and uncooked rice. Season with Italian seasoning, salt, and pepper.
  3. Stir the mixture well and cover the crockpot. Cook on low for 6-8 hours, checking for doneness of cabbage and rice.
  4. Serve warm, optionally with crusty bread for dipping.
