Description
A comforting, creamy pasta dish made with slow-cooked chicken, sausage, and a ranch-forward sauce, all folded into tender pasta.
Ingredients
Scale
- 1 1/2 lbs boneless, skinless chicken breasts or thighs
- 1 lb smoked sausage, sliced
- 1 packet ranch seasoning mix (1 oz)
- 1 can cream of chicken soup (10.5 oz)
- 1 cup chicken broth
- 8 oz cream cheese, cubed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 12–16 oz pasta (penne, rotini, or shells), cooked separately
- 1 1/2 cups shredded cheddar or mozzarella
- Optional garnish: parsley
Instructions
- Lightly spray the crockpot with nonstick spray. Place the chicken in the bottom of the crockpot and arrange the sliced sausage on top.
- Sprinkle the ranch seasoning over the meat, add the cream of chicken soup, and pour in the chicken broth. Add the garlic powder, onion powder, and black pepper.
- Cover the crockpot and set it to cook on LOW for 6–7 hours or on HIGH for 3–4 hours until the chicken is done.
- Add the cubed cream cheese during the last 30 minutes and shred the chicken once softened.
- While the chicken finishes, cook the pasta separately. Drain well.
- Stir the cooked pasta into the mixture, then add the shredded cheese and stir until melted. Garnish with parsley and serve warm.
Notes
For added richness, use full-fat cream cheese and cheeses. If the sauce is too thin, let it sit uncovered on warm for 10 minutes. Adjust salt to taste.
