Description

A comforting and simple one-pot dish featuring tender potatoes soaking in taco-seasoned beef and topped with gooey cheese.


Ingredients

  • 2 lbs potatoes, diced (russet, gold, or red)
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning (1 oz)
  • 1 can Rotel (10 oz, undrained)
  • 1 cup sour cream
  • 1 cup shredded cheddar
  • 1 cup shredded mozzarella (optional)
  • 1 cup corn (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Optional toppings: jalapeños, cilantro, green onions, salsa

Instructions

  1. Heat a large skillet over medium heat and add the ground beef and diced onion. Cook until the beef is nicely browned and the onion turns translucent.
  2. Stir the taco seasoning, Rotel, garlic powder, paprika, and black pepper into the hot beef. Remove from heat when fragrant.
  3. Lightly spray the crockpot with nonstick spray. Add the diced potatoes in an even layer.
  4. Spoon the taco beef mixture over the potatoes, allowing flavors to mingle.
  5. Dollop and swirl the sour cream over the top.
  6. If using corn, sprinkle it over now.
  7. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours until potatoes are fork-tender.
  8. Sprinkle the shredded cheddar and mozzarella over the top, cover, and let melt for about 10 minutes.
  9. Add optional toppings and serve warm.
