Ingredients

- 2 cups cooked chicken, shredded
- 3 cups cooked rice
- 1 cup peas and carrots (frozen or fresh)
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Gather all your ingredients.
- In a crockpot, combine the shredded chicken, cooked rice, peas and carrots, chopped onion, and minced garlic. Mix evenly.
- In a small bowl, mix together soy sauce and sesame oil, then pour it over the ingredients in the crockpot.
- Stir to distribute the sauce evenly.
- Cover and cook on low for 2-3 hours.
- About 30 minutes before serving, push the rice mixture to one side and pour the beaten eggs into the other side. Scramble eggs until cooked, then mix back into the rice mixture.
- Season with salt and pepper to taste and garnish with green onions before serving.
