- 4 chicken thighs
- 4 carrots, chopped
- 3 potatoes, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Place the chicken thighs at the bottom of your crockpot, spread evenly.
- Add the chopped carrots, potatoes, onion, and garlic on top of the chicken.
- Pour the chicken broth over the mixture.
- Sprinkle thyme, rosemary, salt, and pepper over the ingredients.
- Cover the crockpot and set it on low for 6-8 hours.
- When ready, serve warm and enjoy.
Notes
For a richer flavor, consider searing the chicken thighs before placing them in the crockpot. You can also use frozen chicken thighs; just adjust cooking times accordingly.
