Description

Tender potatoes enveloped in cheesy goodness and infused with the savory aroma of garlic and herbs, made effortlessly in a crockpot.


Ingredients

  • 2 lbs baby potatoes
  • 1 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Wash the baby potatoes, slice them in half, and place them into the crockpot.
  2. In a mixing bowl, combine olive oil, minced garlic, dried Italian herbs, salt, and pepper. Stir well.
  3. Pour the seasoning mixture over the potatoes and toss gently to coat.
  4. Sprinkle grated Parmesan cheese on top of the potatoes.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until fork-tender.
  6. Garnish with chopped parsley before serving.

Notes

These potatoes can be prepped the night before. Store cut potatoes in water to prevent browning.
