Ingredients

- 2 lbs baby potatoes
- 1 cup grated Parmesan cheese
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tsp dried Italian herbs
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Wash the baby potatoes, slice them in half, and place them into the crockpot.
- In a mixing bowl, combine olive oil, minced garlic, dried Italian herbs, salt, and pepper. Stir well.
- Pour the seasoning mixture over the potatoes and toss gently to coat.
- Sprinkle grated Parmesan cheese on top of the potatoes.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until fork-tender.
- Garnish with chopped parsley before serving.
Notes
These potatoes can be prepped the night before. Store cut potatoes in water to prevent browning.
