Ingredients

- 4 cups of potatoes, peeled and diced
- 2 cups of broccoli florets
- 1 onion, diced
- 4 cups of vegetable or chicken broth
- 1 cup of shredded cheddar cheese
- 1 cup of milk or cream
- Salt and pepper to taste
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
Instructions
- Prep the vegetables: Peel and dice the potatoes, chop the broccoli, and dice the onion.
- Combine the potatoes, broccoli, and onion in the crockpot.
- Pour in the broth and sprinkle garlic and onion powder over the top.
- Season with salt and pepper, and stir gently.
- Set the crockpot to low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the cheddar cheese and milk/cream.
- Blend the soup if a smoother texture is desired, or leave it chunky.
- Serve warm, garnished with extra cheese or croutons.
Notes
For a vegan option, use plant-based cheese and milk. Add cooked meat for extra protein.
