Ingredients

  • 4 cups of potatoes, peeled and diced
  • 2 cups of broccoli florets
  • 1 onion, diced
  • 4 cups of vegetable or chicken broth
  • 1 cup of shredded cheddar cheese
  • 1 cup of milk or cream
  • Salt and pepper to taste
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder

Instructions

  1. Prep the vegetables: Peel and dice the potatoes, chop the broccoli, and dice the onion.
  2. Combine the potatoes, broccoli, and onion in the crockpot.
  3. Pour in the broth and sprinkle garlic and onion powder over the top.
  4. Season with salt and pepper, and stir gently.
  5. Set the crockpot to low for 6-8 hours or high for 3-4 hours.
  6. About 30 minutes before serving, stir in the cheddar cheese and milk/cream.
  7. Blend the soup if a smoother texture is desired, or leave it chunky.
  8. Serve warm, garnished with extra cheese or croutons.
