Description
A comforting and hearty soup made in a crockpot, infused with rich flavors from chicken, hominy, and spices.
Ingredients

- 2 cups hominy, drained and rinsed
- 1 pound chicken (thighs or breasts)
- 6 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes with green chilies
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- Toppings (shredded lettuce, radishes, lime, avocado, cilantro)
Instructions
- In a large crockpot, add the chicken along with hominy, chicken broth, chopped onion, minced garlic, diced tomatoes, cumin, oregano, and a sprinkle of salt and pepper.
- Stir gently to combine all the ingredients, letting the spices infuse their flavors into the chicken and broth.
- Cover the crockpot and cook on low for 6 to 8 hours or on high for about 4 to 5 hours.
- Once cooked, remove the chicken from the pot and shred it using two forks.
- Return the shredded chicken to the pot, mix well, and serve hot, adding your favorite toppings.
Notes
Sear the chicken before adding to the crockpot for extra flavor. Adjust seasoning towards the end of cooking.
